There is a better way to eat Sardines

In my youth, my mother always made sure we had certain foods to snack on when we got home from school. Some in particular were peanut butter patted on celery, chocolate milk, Tang, green chili stew, fresh home-made bread and butter, or sardines with saltine crackers. Only when there was nothing else, would I go for the sardines.


Today, knowing the health benefits of sardines, I try to eat them once a week. To make them more exciting I am always trying new combinations. Here is a new creation from last week that has been a hit with my family.


Sardines with Sour Kraut

From the Kitchen of Debra L Speck


1 slice bread (gluten-free is my choice) toasted lightly

1 small pat of butter or ghee spread on the bread

1 tsp or more to taste Grey Poupon mustard

1/2 can or more sardines

Sour Kraut to cover the sardines

Dash of salt and pepper

Garnish with micro greens

Drizzle a little olive oil over the greens
